At the banquet at a wine house, if a client wanted the company of a prostitute, he had to write on a piece of “Flower Notepaper” provided by the wine house. The piece of paper was also called “Flower Paper” or “Occasion Ticket”. On the top of the piece of paper, the client wrote his family name and his ranking in the family, for instance, Chan 12th Young Master or Lee 6th Young Master and the like. Then in the middle of the piece of paper, wrote the name of the prostitute invited to attend, and at the bottom of the paper, the name of the brothel. And the wine house would fill in the name of the banquet hall taken up by the client to prevent the prostitute from getting to the wrong place. Finally, the Flower Notepaper would be given to the wine house attendant, with the title “Flour Water”, and he would run to the brothel to deliver the note to the prostitute. According to the rules of brothels, a prostitute had to have received the Flower Notepaper in order to attend or “join the occasion”. Popular prostitutes often had to attend several “occasions” each night. If they were not available, they could “reject the paper”, and asked the “Flour Water” to return the Flower Notepaper to the client with a reply that Madam was “not available” or “out on a trip”.
